Roasted Radish & Strawberry Salad
Serves 1-2

When playing withe these beautiful baby radishes I had the sudden instinct that sweet strawberries would be a perfect match to their spicy bitterness… and I was write. This “salad” or side, is best when warm and alongside something off the grill.

1 lb. baby radishes, with stems
Extra virgin olive oil
½ cup almonds, chopped
1 blood orange, zested and juiced
1 pint strawberries, hulled and halved
1 pack of radish microgreens

Heat broiler to high. Place radishes on a large sheet tray and toss with olive oil and salt. Broil until radishes are slightly browned and leaves are slightly crispy and browned. Remove to a large bowl and toss with almonds, zest, juice, strawberries and microgreens. Dress with more olive oil and salt, as needed.
