Roasted Baby Artichokes

Roasted Baby Artichokes
Serves 2-4 as a side

I love artichokes and while the big guys may be more laborious, these little ones are super simple and low maintenance, or as low maintenance as an artichoke can be.

1 lemon, halved
4 baby artichokes, halved with chokes removed
Extra virgin olive oil
Salt
½ stick softened butter
4 ramps, cleaned with bottoms and tops cleaned and chopped

Preheat broiler.

Fill a small saucepan with water and juice 1 lemon. Add artichokes and simmer over medium heat until fork tender. Remove and dry completely.

Place artichokes on a small sheet tray and drizzle with olive oil and salt. In a small bowl mix butter and ramps and then dollop the inside of each artichoke with butter. Broil until browned and butter is melted and fragrant.

Global 8” Chef’s Knife // $160 Another favorite knife that I was gifted after working on a TV show. Global knifes are light weight and appeal a lot towards women. Sleek design is not for everyone, especially those that like a big handle. For me, this is one of my favorite knives in rotation - it’s also not super expensive, so it’s the one I take when I travel or rent a house and need my knives on vacation.

Falcon Baking Dish // $38 This isn’t what I used for this recipe (you can use any old sheet tray) but I do love these Falcon dishes because they go from oven to table and look chic. They also make sheet trays.

Cutting Board // $50 I have this cutting board at home and use it nonstop and more than any other board I have. It’s something about a square board that makes everything super clean and tight. As a young chef you’re taught to keep a clean workspace and this helps me mentally and physically do that.
