Homemade Farfalle

Homemade Farfalle
Serves 2

1 lb. fresh pasta
1 stick butter, cubbed
1/2 cup water
1 bunch
1 bunch chives or parsley, finely chopped
1 lemon, zested
Parmesan or pecorino cheese

Cut pasta into 1” x 2 “ pieces and pinch in the middle to create a bow-tie. Heat 1/2 cup of water in a saucepan and when simmering, slowly whisk in cubes of butter until melted and silky. This may take a few minutes, the idea is to maintain the heat of the water and emulsify the butter into the water.

Add pasta and cook for a minute or two, tossing gently with a spoon. Season with salt, lemon zest, herbs and desired amount of cheese. Serve immediately.

Ruffoni Copper Skillet // $277   This pan was also gifted after working on a show in Italy with mentor and boss, Giada DeLaurentiis. Is copper worth it? It does conduct heat excellently and it’s not cheap but it sure is pretty. Don’t be daunted by cleaning, simply use lemon juice and salt (yes!) and rub until shiny with a clean kitchen towel.
