Bibb Lettuce & Pistachio Dressing

Bibb Lettuce & Pistachio Dressings
Serves 4

This salad is light, refreshing and super satisfying during warmer months or to accompany a fatty juicy steak. Use any nut en lieu of pistachios if you don’t have on hand.

1 head bibb lettuce, pulled apart
1 shallot, minced
1/2 lemon zested
Juice 1 lemon
2 tablespoons sherry (or any type) vinegar
1/2 teaspoon salt
1/4 cup chopped pistachios
1/4 cup extra virgin olive oil

In a small bowl whisk together shallot, lemon zest, lemon juice, vinegar, salt, pistachios and olive oil. Pour over bibb lettuce arranged on a plate or large shallow salad bowl. Garnish with cheese (I used ricotta salata) if desired.
