Radish + Salt + Butter = a classic French combo… but never had it and don’t know how to try?

I love using the herb compote butter I made a few weeks ago and toasting two slices of bread in the melted butter. I then top them with a slather of ricotta cheese (double the good fat — why not!), thinly sliced radishes, radish tops (don’t throw those out!), and a sprinkle of salt. It’s a great way to elevate — and make a meal out of — the classic French picnic staple. I love this for a quick, healthy lunch!
