The Ultimate Veggie Sandwich
Makes 1 sandwich

I love a vegetable sandwich but they’re hard to come by. The ideal sandwich has a satisfying salty, crunchy bite that makes you salivate the same way you would over a juicy burger. The food stylist’s secrets here are simple, cut all your vegetables the same way, season as you go and more is always more. Feel free to use whatever “sauce” you’d like to bind your sandwich, even if it’s store bought hummus or mayonnaise.

1 tablespoon Dijon mustard
1 tablespoon honey
2 slices of whole wheat bread, toasted only on one side
3-4 leaves of bibb lettuce
10 or so slices of cucumber, shaved on a mandolin
2-3 radishes, shaved on a mandolin
2-3 slices of thinly sliced tomato
1 handful of shredded carrots
1 handful of sprouts
Half an avocado
Juice of half a lemon
Salt

In a small bowl combine mustard and honey. Spread evenly on both untoasted sides of the bread.

Layer bibb lettuce, cucumber, radishes, tomato, carrots and sprouts, evenly divided between each side and in whichever way speak to you. Add avocado and sprinkle both sides with salt and lemon juice. Sandwich and halve, serve with pickles and chips.
