The New Wedge
Serves 2-4

Split 2 heads bibb lettuce and arrange on a platter.

Blitz together 1 cup Greek yogurt, 1 garlic clove, zest and juice of 1/2 lemon, a splash of vinegar, a handful of herbs (mint, cilantro & tarragon), a glug or evoo, and salt & pepper.

Crisp 1/4 lb. thinly sliced prosciutto under the broiler along with a few pieces of oiled bread. Dress wedges with green goddess dressing and garnish with crispy prosciutto. Season the whole thing with more salt & pepper.
