We could do this the old fashion way, with thick globs of mayonnaise or sour cream, but the 2019 definition of “green goddess” means that the greens are what’s green. Blanching heartier greens (such as beans, asparagus or peas!) is an excellent way to make them salad accessible. I use frozen peas, you can’t taste the difference and everyone should have them on hand. Toss with a zippy dressing.

5 ounces sweet & spicy greens or a combination of butter head & mustard greens
½ lb. trimmed and blanched green beans
½ cup defrosted frozen peas
½ granny smith apple, thinly sliced
2-3 ounces microgreens
1 tablespoon sesame seeds

Dressing:

1 lemon zested and juiced
6 tablespoons extra virgin olive oil
1 teaspoon salt

Toss greens, beans, peas, apple slices and microgreens together. Whisk together lemon zest, juice, olive oil and salt and dress salad as desired – you may not need or want all of it. Stores for up to a week.

Season with sesame seeds – tan or black – whatever you have on hand.
