Earth Day Bowl
I made this bowl for Earth Day, it’s a great reminder that sourcing quality ingredients and eating a little more vegetable than meat goes a long way.
Combine cooked quinoa with bok choy, sesame seeds, flax seeds, yellow/orange tomatoes, roasted broccoli rabe and walnuts. Drizzle generously with olive oil and sprinkle with salt.
