Cod Confit

Cod is the Plain Jane white fish of the sea so imagine this is its chance for a makeover. For tonight dinner, confit (which means to cook in fat) filets of cod using extra virgin olive oil, herbs, spices and aromatic lemon slices to create a pantry driven dish that feels elegant and oh-so- French.

1 cup extra virgin olive oil
Scattered whole peppercorns or fennel seeds
¾ - 1 lb. Cod or firm white fish, skin removed
1 lemon sliced
4 cloves garlic, smashed
Few sprigs thyme

Preheat oven to 350° F.

In a small saucepan heat olive oil and spices until just warmed.

In an oven proof pan place fish and top with lemon slices, garlic cloves and thyme. Pour olive oil over fish and place in oven, bake for 8-10 minutes and serve while warm.
