Watermelon, Cherry, Pinot Granita
4 cups watermelon, chopped
cup cherries, pitted and roughly chopped plus extra for garnish
2 cups pinot noir
1/2 cup sugar
Mint, optional garnish
Puree watermelon. In a small saucepan heat juice with sugar and cook until just dissolved. Remove from heat and add wine and cherries. Place in a shallow brownie pan and freeze until set. Using a fork flake granita into wine glasses and top with additional floater or pinot, cherries or mint leaves.
