Watermelon and Feta Salad

 I love watermelon. Not only is it good for you (it's mostly water and contains vitamins that help prevent sun damage!) it's delicious both as a savory and a sweet.  As a self declared "sweet tooth" it's nice to transition from July's month of ice cream to August/September's era of watermelon. Watermelon even makes a great school snack for back-to-school lunches.

Watermelon and Feta Salad
Serves 8-10

1 large seedless watermelon
1 cup cherries, pitted and roughly chopped
1 cup Kalamata olives, pitted and roughly chopped
1 bunch mint, roughly torn
Olive oil
4 oz. French feta

Cube watermelon and toss with cherries, olives and mint. Season with salt and olive oil. Toss with desired amount of feta.
